Ancient grains are whole grains that have remained intact since the time of the ancient Romans, unlike grains that have been cross-bred or modified over time.

“They have become extremely popular lately,” says Craig Richards, executive chef at St. Cecilia restaurant in Buckhead. “They are a great source of B vitamins, which are great for brain activity and energy levels, and they contain a lot of antioxidants.”

How to prepare ancient grains

Ancient grains are a great substitute for pasta,” says Richards. “And if they are cooked the right way— al dente and creamy, they are very delicious.”
