Grilled Napa Cabbage Salad with Bacon, Summer Squash, Kale and Smoked Onion & Yogurt Dressing

Cabbage is a versatile vegetable. It can be eaten raw, boiled, grilled, pickled, or even steamed. Cabbage is a great source of vitamin A, vitamin C, iron, fiber and potassium.

Ingredients:

  • 1 or 2 heads of cabbage
  • ½ pound of kale
  • 2 summer squash
  • 4 spring onion bulb or Vidalia onions
  • ¼ pound of Bacon (optional)
  • 1 tablespoon chopped fresh rosemary

Dressing Ingredients:

  • 8 ounces Fresh Garlic, Chive & Herb Greek Cream Cheese
  • 2 tablespoons rendered bacon fat (optional)
  • 2 tablespoons sesame oil
  • 2 tablespoons pure Vermont maple syrup
  • 1 cup chopped smoked onion
  • ¼ cup cider vinegar
  • Salt & pepper

To make the dressing, simply combine all ingredients (except bacon fat and sesame oil). Mix thoroughly.

Gradually whisk in sesame oil and bacon fat.  Season accordingly and allow to rest in the refrigerator for at least one hour.

To assemble the salad, simply char cabbage over moderate heat.  In a large mixing bowl mix with kale, squash, chopped bacon and rosemary. Dress salad carefully and serve immediately.
