Cocoa chili

Ingredients for the seasoning:

  • ½ cup cocoa powder
  • 2 tablespoons chili powder
  • 2 teaspoons oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cumin

Ingredients for chili:

  • 2 pounds ground beef
  • ½ onion, chopped (about 1 cup)
  • 6 garlic cloves, minced
  • 1 red bell pepper, chopped (about 1 cup)
  • 1 jalapeno pepper, ribbed, seeded and diced
  • 2 (28-ounce) cans of crushed tomatoes
  • 1 (6-ounce) can tomato paste
  • 2 ounces bittersweet chocolate, chopped
  • ¼ cup lime juice
  • Cheddar cheese, for topping
  • Sour cream, for topping

To make the spice packet:

Put all spices in a zipper-lock bag or plastic seal container and shake it around until they are blended. Taste the mix and add spices as desired.

To make the chili:

  1. In a large Dutch oven, brown the ground beef over medium-high flame until just barely done. Remove it from the pan and set aside.
  2. Reduce the heat to medium and add the onions and garlic. Cook these until the onions are soft. Then add the rest of the bell pepper and jalapeno pepper.
  3. Add the browned beef to the pot, along with the crushed tomatoes, tomato paste, chopped chocolate, lime juice and the chili-chocolate-spicy seasoning.
  4. Reduce the heat to a simmer and cook for about 15 minutes.
  5. Serve with shredded sharp cheddar cheese and sour cream.
