How to make a healthy watermelon cake

Have your cake and eat it too with this healthy watermelon “cake” recipe from Nancy Waldeck, a chef at Cancer Wellness at Piedmont.

Ingredients:

  • 1 large watermelon

  • Greek yogurt

  • Slivered almonds

  • Sliced strawberries

  • Raspberries

  • Blueberries

  • Unsweetened shredded coconut

Instructions:

  • Wash and dry the watermelon, then carefully slice off the ends to create a flat base on the top and bottom.

  • Place the watermelon on one of its flat ends and carefully slice off the remaining rind, trimming until the watermelon's shape resembles a tall layer cake.

  • Once you’ve removed all of the watermelon rind, place the fruit on a cake stand.

  • Using a spatula, spread Greek yogurt on the top and sides of the watermelon.

  • Sprinkle slivered almonds across the sides of the cake.

  • Place raspberries in a circle along the base of the watermelon.

  • Top the cake with sliced strawberries and blueberries.

  • Sprinkle the top of the cake with unsweetened coconut shavings.

  • Slice and enjoy your healthy watermelon cake!
