Lighter and luscious apple granola

Apples, nuts and yogurt are all heart-healthy snacks and make an excellent crunchy breakfast, snack or yogurt parfait. Nancy Waldeck, a chef at Cancer Wellness at Piedmont, shares a delicious recipe for light and luscious apple granola.

Ingredients

  • 3 cups oats

  • ¼ cup uncooked millet (optional)

  • ¼ cup sesame seeds

  • ¼ cup chopped walnuts

  • ¼ cup chopped almonds

  • 1 ½ tsp cinnamon

  • ¼ tsp each mace, ginger and cardamom

  • ½ cup chopped dried apples

  • ¼ cup maple syrup

  • ¼ cup orange juice

  • Zest of one orange

Instructions

Preheat the oven to 300 degrees. In a large bowl, combine all dry ingredients except the dried apples. Drizzle in the maple syrup and stir well. Add orange juice and zest, stirring so all ingredients are coated.

Spread the mixture out onto a parchment-paper-lined baking sheet and bake for about 30 minutes, stirring and checking every 10 minutes so nothing burns.

Remove from oven, add the apples and cool completely. Store in an airtight container.
